Pineapple Mojitos Recipe

Ingredients:
1 bunch of fresh mint (discard stems)
2 limes (each cut into 8 wedges)
1/2 cup sugar
1 cup pineapple juice
1 cup of canned, crushed pineapple
1 cup light rum
4 cups of ice cubes
1 cup of club soda
In each of 8 highball glasses, crush together 1/8th of the mint leaves, 2 lime wedges, and 1 tablespoon of sugar. Stir in 2 tablespoons of pineapple juice, 2 tablespoons of crushed pineapple and 2 tablespoons rum. (Until sugar is dissolved). Add 1/2 cup of ice cubes and a splash of club soda to each glass. Serve immediately. Serves 8.
